New Crew Members & a Cheers-Worthy Eclipse Menu

We’re upping our game.

The Cork is proud to welcome two new stars to the Red Letter Hospitality Family this Spring. Meet Executive Chef Aaron Busch and General Manager Scott Williams. Their commitment to excellence and enthusiasm about the industry are notable, and we could not be more thrilled to have them join our growing team. Executive Chef Aaron Busch is a true-blue Northerner who left home in 2006 to start his career in Apex, NC. He worked at the NC State Alumni Club and renowned Maximillians Grill & Wine Bar before his passion for cuisine took him further south to the iconic Fontainebleau Hotel, Blue Collar Restaurant, and later Bird & Bone in Miami, Florida. He was awarded “Best Brunch in Miami” two years in a row before making his way back North, plugging into Pittsburgh’s expanding foodie scene. “Getting back to my roots and joining the Red Letter Hospitality Crew has been invigorating, and I could not be more excited for this new chapter,” said Chef Aaron.

Fun Facts: If Chef Aaron is not in our kitchen, you may find him foraging for ramps and mushrooms or perfecting his wood-fired BBQ skills at home—two hobbies he takes very seriously.

To say General Manager Scott Williams knows a thing or two about what it takes to thrive in a fast-paced environment is an understatement. He has served as a chef, front-of-house manager, bar manager, culinary manager, and general manager—dominating every position. Understanding the inner workings of a restaurant is a passion of his. As a local Erieite, his career began with a Culinary Arts Degree from Mercyhurst North East and a Hotel Restaurant Institutional Management Degree from Mercyhurst University. Post-graduation, he moved to Beachwood, OH, and spent several years building his culinary foundation at beloved restaurants like City BBQ and Melt Bar and Grilled. He and Erika, his wife of 18 years, recently moved their family (son Taylor—17, daughter Brooke—15, and daughter Madison—11) back to the area and couldn’t be more thrilled to be home.

Fun Facts: Scott’s go-to comfort food is a large, extra-cheesy pizza–homemade or from one of Erie’s many local pizza shops. From time to time, he also enjoys escaping city life and heading to the woods in his family’s camper for proper R&R.

A total eclipse of the culinary art.

Anticipation of the Solar Eclipse has kept our talented team busy, dreaming up an out-of-this-world special event menu.

Bright, tasty stars are the Sweet Crab Corn Cake and Blackberry Mustard Pork Shank. Stellar cocktails include the Blackout Martini, the Midnight Mojito, and our new Lunar Lemonade mocktail.

We’re expecting to be very busy this weekend, so be sure to get your weekend reservations in early. Guests who make a reservation Saturday, April 6th–Monday, April 8th get free solar eclipse glasses!
