Winter Salad

January is upon us, and the promise of a new year has our team re-energized. For those of you with “health is wealth” resolutions, we’re featuring two winter entrées that will make it easy to stay steady on the course—our signature Winter Salad and Pan Seared Salmon.

Our vibrant Winter Salad begins with a strong foundation of flavor-packed arugula and crisp kale. Next, hearty slices of butternut squash, pan-fried Brussels sprouts, cauliflower, and cannellini beans are layered in. A generous scoop of tart, dried cranberries, candied walnuts, and creamy feta crumbles top this colorful bowl off. Lastly, a drizzle of Chef Jason’s zesty lemon horseradish vinaigrette brings it all together. Optional protein additions include your choice of shrimp, chicken, salmon, scallops, or our tasty crab cakes.

Blueberry Lemonade and Starry Night drinksAnother healthy and flavor-packed entrée option is our Pan Seared Salmon. We begin with a thick cut of salmon, pan-seared to perfection in charred butternut squash bechamel. We’ve paired it with a nutrient-dense vegetable trifecta of roasted purple potatoes, broccolini, and lima beans, drizzled with a Sherry Sabayon and a dollop of Meyer Lemon relish. This entrée is rich in omega-3 and B vitamins, offers a notable dose of protein, and is naturally gluten-free.
